Ingredients
- 400 mL coconut milk
- ½ vanilla bean (sub 1 tbsp + 2 tsp vanilla)
- 2 tbsp maple syrup
- 2 g salt
- 35 g potato starch (3 tbsp)
Dissolve the potato starch in a little cool coconut milk (or cool water) before adding to the rest to prevent clumping. Combine everything in a saucepan and cook over medium heat, stirring constantly, until thickened. Cool before filling a pre-baked tart shell.
